Kaiserschmarren

Melanie and Andreas Gulfer have been running the alp and agritourism for years and their incredibly tasty Kaiserschmarren is now famous far and wide.

Recipe to follow

Ingredients for approx. 8 tartlets
150 g Flour
200 ml Milk
6 Eggs
1 Pinch of salt
2 tablespoon of sugar
1 teaspoon vanilla sugar
Butter for baking
Sugar and powdered sugar for caramelizing and sprinkling

Preparation

Mix the flour, milk, salt, sugar and vanilla sugar well. Finally, stir in the eggs. Here in the Alps, the Schmarren dough rises particularly well due to the height. We recommend separating the eggs to ensure that it rises in the same way. Stir the egg yolks into the flour and milk mixture. Beat the egg whites until stiff and fold in. Heat the butter in a wide pan. Pour in the batter and cover with a lid. When small bubbles form, the pancake is ready to be turned. Divide the pancake into four pieces so that you can easily turn the individual pieces over. Put the lid back on and finish baking. Break up the pancake with two spoons until you have nice pieces. Sprinkle with sugar and allow to caramelize briefly. Serve on a plate and sprinkle with powdered sugar. Serve with cranberry jam or apple compote.
