SPELUCA launches seasonal beer “Il Panettista”

SPELUCA Brewery & Gourmet Hotel turns stale bread into beer: With “Il Panettista,” the brewery in Splügen is launching its second seasonal beer—thereby strengthening the unique partnership between the bakery and the brewery.

A beer with a story—and a clear conscience

“Il Panettista” contains 65 kilograms of stale bread from the brewery’s own bakery. Master brewer Tobias and baker Roger developed the recipe together: The processed bread replaces about 15 percent of the malt normally used in brewing—a resource-conscious decision that also gives the beer its distinctive character.

The result is approximately 1,800 liters of a top-fermented seasonal beer (5% ABV), brewed with Pilsner malt, Carapils malt, hops, top-fermenting yeast, and various types of bread containing the following ingredients: rye, wheat, pretzels (salt), and spring water from the Stockenawald.

Bread Beer Tapping and Availability

The bread beer tapping will take place on Thursday, March 26, 2026, at the SPELUCA Brewery. Afterward, “Il Panettista” will be available for a limited time—on tap and in bottles—at the “Bierflut” bar, the SPELUCA Restaurant, and the brewery’s on-site shop.

About the SPELUCA Brewery

The SPELUCA Brewery has been brewing in Splügen since November 2024 and offers five signature beers as part of its regular lineup: Grand Tourer (Bohemian Lager), Bon Vivant (Kellerbier), Pschuuri Braut (Stout), Frohnatur (Hefeweizen), and Sportskanone (non-alcoholic). The lineup is complemented by select seasonal beers—“Il Panettista” is the second such offering after “Süffi Santa.”

SPELUCA beers are now available at over 70 partner establishments—from Ticino through Rheinwald Domleschg regions, via Thusis, Chur, and Lenzerheide, all the way to the Engadin and parts of Central Switzerland.
